Episode 136 – Cudia Cocktail Consulting – Michelle Cudia

This episode features Michelle Cudia of Cudia Cocktail Consulting.

Michelle started working at Tria Taproom as a bar manager. They were looking to extend their draft cocktail program. At the time she didn’t have any experience with craft cocktails. She set out to write the whole plan for the bar. She was able to spread her “cocktail nerdiness” to events and the public. In 2019 Michelle launched Cudia Cocktail Consulting as an official business. She works with weddings, birthday parties, bachelor and bachelorette parties. Just about anything that you can imagine that could enjoy sensational, one of a kind, cocktails that create a memorable event. She’s always ready for discussion of cocktails and helping businesses take their program to the next level. Cocktails are meant to be celebratory!

Episode 133 – Catoctin Creek Distilling Company – Becky Harris

This episode features Becky Harris of Catoctin Creek Distilling Company .

Becky and Scott founded Catoctin Creek in 2009. At the time there were about 200 distilleries in the United Sates and 6 in Virginia. They began with a vision of making rye whiskey which was “the whiskey” up until prohibition in the Mid-Atlantic States. At Cotoctin they use batch pot still distillation. This is the key to deriving the most flavor from the rye grain. In the beginning it was difficult to get farmers to take a chance on this little craft distillery. Today those farmers are glad that they did. Catoctin produces some of the finest rye whiskey’s. Combine that with the delicious cocktails in the tasting room and you have a recipe for continued growth and success. We enjoyed our fascinating conversation about history, the spirits industry and Catoctin Creek Distilling.

Episode 122 – Ichiko Shochu – Tetsuro Miyazaki

This episode features Tetsuro Mayazaki of Iichiko Shochu.

Shochu is the original Japanese craft distilled spirit.  It is more popular than sake and Japanese whisky.  This delicious spirit is a newcomer to the American market.  All of these years it has been unique to Japan and its restaurants.  Iichiko Shochu is distilled from barley.  In 1979 Iichiko was launched.  Today it is the number one consumed shochu in Japan.  After tasting these exceptional expressions we can fully understand why.  We loved learning from Tetsuro about shochu and its origins.

Episode 116 – Spring House Spirits – Chris Demars – Randy and Jenn Litwin

This episode features Chris Demars, Randy Litwin and Jenn Litwin of Spring House Spirits.

Sixty years ago Chris’s grandmother taught him how to distill spirits, make wine and brew beer.  Chris worked as a nuclear engineer which is kind of like being a distiller.  He longed to come back to the family farm and get back to his distilling roots.  He pays homage to his grandmothers background by bringing several grains together in the mash bill.  This bespoke farm distillery is creating amazing spirits that are full of character and flavor.  Each bottle highlights the quality of the process, the local grains, and the connection to the history of the surrounding Chester County community.

Episode 111 – Method Spirits – Corey Fitzsimmons

This episode features Corey Fitzsimmons of Method Spirits.

Corey was a bartender in New York City for over a decade.  He had the honor of being the head bartender at the new location for the Union Square Cafe.  He quickly discovered the he was not able to source local vermouth that would work for classic cocktails.  He began working on a vermouth using his own recipes and exploring opportunities.  This took him to going out on his own to develop Method Spirits.  He and his partners spent 2 years developing the recipe for their sweet vermouth.  We have to share that it is delicious and complex.  It gives wonderful depth and character to cocktails and it stands on its own neat or with a little club soda.  Keep an eye out for the dry vermouth that they have created.

Episode 102 – Absinthia Vermut – Absinthia

This episode features Absinthia Vermut of Absinthia.

It all began in 1996 when Absinthia attended a San Francisco Cacophony Society party.  There was a crystal bowl on the table with a green liquid.  At that very moment absinthe was still illegal.  She tried absinthe for the very first time.  To her it was delicious.  She was drawn to it so much that she decided to produce it.  The first night that she served her neon green absinthe her friends started calling her Absinthia.  Of course the name stuck.  Our conversation is fascinating and full of absinthe education.  You most certainly want to pick up her absinthe and special cocktail mixers.

Episode 100 – Holy Ghost Distillery – John and Janice Sepcoski

This episode features John Sepcoski and Janice Sepcoski of Holy Ghost Distillery.

Janice and John enjoyed visiting distilleries, breweries and wineries.  After visiting a distillery 7 years ago John said, “I can do better then this”.  This led them to looking for land and a building to host their vision.  What they’ve set out to create is a total experience.  Not just buy a bottle or purchase a cocktail, but the experience to make new friends over a cocktail.   They have left their full time careers to live out a dream.  As Janice puts it, “Now I do Bourbon”.  We had a wonderful time experiencing their chocolate and bourbon pairing.  The final part of our podcast journey was the absinthe extravaganza.  It was all a fitting tribute to celebrate our 100th episode.

Episode 72 – Manatawny Still Works – Max Pfeffer

This episode features Max Pfeffer of Manatawny Still Works.

Max graduated Penn State University with a degree in chemical engineering.  He began home brewing when he was in college.  This led to him discovering the UC Davis Master Brewing program.  His education and experience led him to a stint with Victory Brewing Company and then to Sly Fox Brewery.  One day, Owner John Giannapoulas, called Max into his office.  He approached Max about opening a distillery.  Max knew beer but not distilled spirits.  That was over 8 years ago.  Today, not only does Max know distilling, he excels at it on a high level.  He and his team are producing whiskeys that are incredible.  What is coming out of the barrels now are spirits full of character, flavor and complexity.  This is a must visit for craft spirit lovers.  When you do you will become a fan for life.

Episode 66 – Dragon Distillery – Ashley Perez

This episode features Ashley Perez of Dragon Distillery.

Mark and Tania Lambert founded Dragon Distillery as a passion project.  The theme is inspired by the game Dungeons and Dragons.  However, when it comes to the spirits they are not playing games.  Mark’s family settled in Frederick in the 1700’s.  The moonshine recipes date back to before prohibition.  In 2015 the Lambert’s opened Dragon and it is the first distillery to open in Frederick since after Prohibition.  Ashley shares the story of the distillery and we sample many of the amazing craft distilled spirits.  Like many craft businesses they support local farmers to create their products.
